Gettin’ back on track–Pasta with chicken sausage recipe

OK, so all that I have posted for the last week or so is griping and groaning about being tired, readjusting to school, etc. I haven’t posted one craft or recipe since I don’t know when.  So, I’ve got a new recipe for you.  It got thumbs up reviews from all the people I live with 🙂

Chicken sausage  (I bought chicken with feta and spinach)
1 red bell pepper
3 medium size tomatoes diced
1 bag of fresh baby spinach
1 lb of penne pasta
garlic
basil
shredded parmesan

Boil penne in salted water according to package directions.
Put the sausages in a large skillet and brown.  Start at medium/high heat then turn down to medium/low and cover.  Once sausage is cooked, remove from pan and set aside.  Add bell pepper. tomatoes and garlic to pan.  Pour entire bag of spinach on top and sprinkle with salt.  Cover pan and let steam so spinach begins to wilt. This will only take a few minutes.  Stir well.  Add sausage and basil and allow sausage to rewarm.  Combine sausage mixture and pasta.  Top with parmesan before serving.
