I’ve got another veggie recipe for you to use on Friday evenings for the next 6 weeks. You can add any type of ground meat (beef, pork or chicken) if you prefer but it is really good without the meat too.
4 packages of ramen noodles—I used chicken
1 C of shredded carrots
1/2 C of chopped green onions
1 TBS of olive oil
TBSP of garlic powder
TBSP of soy sauce I actually used “Maggi” which is not technically a soy sauce but a flavoring sauce
Note: You could add additional veggies and I typically would. However, all I had on hand today were carrots and onions. However, mushrooms are really tasty in this. As is minced zucchini and/or peas. Bell pepper is also a great addition. Just toss in whatever veggies you like best. There is no right or wrong.
Boil the ramen noodles with 3 packages of the ramen seasoning. Once the noodles are cooked, drain the broth. In a skillet, heat the olive oil and add in the veggies. Get veggies started and then toss in the noodles. Sprinkle with the remaining packet of ramen seasoning, add about a TBSP of garlic powder and a TBSP of Maggi sauce. Stir all together. At this point everything is warm, you just want the noodles to get a little bit of browness or crispness to them then they are ready to serve.
If you want to add meat to this, I would brown the meat prior to adding the veggies and noodles, that way you can drain off the fat and just toss the meat in when you put everything into your skillet.
